The sun begins to rise, casting warm light over the vineyard. We start carefully clipping the grape clusters from the vines, ensuring each bunch is fully ripened. It’s a delicate process—too much haste could bruise the fruit, and precision is key. The grapes are cool to the touch, still holding the morning chill.

10:00 AM – Sorting the Grapes
By mid-morning, baskets overflow with clusters. At the sorting table, we meticulously check each bunch, removing any underripe or damaged grapes. Only the best will make it into the wine, a testament to the winery’s commitment to quality.
